A gastronomic experience of foams of pre-Hispanic origin, made from cocao beans. These foams, still in use in many towns in Oaxaca, are associated with joy and celebration due to their texture and restorative properties.
Our foams have been designed based on traditional recipes, and integrate flavors and combinations inspired by the ingredients of Ancient Mexico. The experience consists of a tasting of five different foams with four entries, to which are added different gestures, rituals and utensils to promote a dialogue between tradition and innovation.
